Toddler Approved Cheese and Cracker Soup
We, meaning me, are getting tired of the same old, same old lunch around here. Macaroni and cheese (top request) and grilled cheese sandwiches (requested when top request is denied). Do you notice a theme here? Hmm.
So the other day on Twitter when @UndomesticAmy starting searching for Cheddar Cheese Soup recipes I got to thinking. This fits with our lunchtime theme of CHEESE, maybe I can sneak in some veg! She dug up a great Broccoli Cheddar soup recipe, alas the green would have scared away the toodler.
So I tried it my own version sans broccoli, she liked it, now I’ll share it.
Keep in mind, I don’t do a lot of measuring when I cook, so you need to use your own discretion if you try this.
What you need:
- 2 Tbsp of Butter
- 2-3 Tbsp of Flour
- 1 Cup of Milk
- 2 Cups of Chicken Broth
- 2 Small/Medium Potatoes
- Cheddar Cheese (grated, cubed or Imperial Cheese)
What to do:
Bake the two potatoes in the microwave or oven. Or use leftover mashed potatoes. Let potatoes cool, peel and mash in a bowl.
In a medium saucepan melt butter over medium heat. Add flour and stir to a smooth paste. As the paste begins to bubble slowly add milk. Cook until thick and bubbly then begin to add chicken broth while stirring. Continue to add slowly until your mixture is bubbling and a cream soup texture.
Add mashed potatoes then cheese. I would use a cup of cheese and taste. In my soup I had about a 1/3 of a container of Imperial Cheese left from Christmas, so I threw the whole thing in. Yum!
Note: you could also use mashed sweet potato or squash with this recipe.
