Spring? Where are You?

I love to garden. Getting the garden ready in the spring is one of my favorite things to do. Planning, shopping, usually too early, caring for the flowers until just the right time when it is safe to plant without risk of frost. This is when we are in full swing for spring.

While we never have spring this early in the year, we are usually at the point where we are starting to see grass and getting to a place where we start to believe that winter just might be over.

This is my garden today and I’m not feeling the hope that winter might be over.





And myself, like most people I know around here, we’ve had enough! Snow, cold, snow, cold, the never ending cycle has become a little much for any of us to take. A year with record snowfall has really pushed me to the brink.

So today we had a little more snow mixed with no sun, and decided to take matters into our own hands and start some planting early.








We’ll keep you posted on our progress, however keep in mind, with no sun it may be minimal.

Put the Happy in St. Patrick’s Day

We’ve been busy this morning preparing for the big day tomorrow! We decided to try these Taste a Rainbow cupcakes in honor of the St. Patrick’s Day. A sweet treat to bring to a coffee/playdate tomorrow.

What do you need:

  • 1 White or Golden Cake Mix
  • 1 Banana or Vanilla Instant Pudding Mix
  • 3 Eggs
  • 1 Cup of Water
  • 1/2 Cup of Vegetable Oil
  • Red, Yellow, Green and Blue Food Coloring

How to:

Mix cake and instant pudding mix in a bowl. Make a well in the center and add eggs, water and oil. Beat on low for 30 seconds, then 2 minutes on medium with the electric mixer.

Divide batter into 5 separate bowls and color Red, Orange (12 drops yellow, 4 drops red), Yellow, Green and Blue.





Line muffin pan with cupcake liners and begin layering the batter in the rainbow formation. Blue, green, yellow, orange, red. Simply place dots of each color on top of one another, they will spread out on their own.








Bake at 350 degrees for 19 minutes. Cool and top with a cloud of whip cream.

Makes 18 cupcakes.
